Tasting Notes
The color of Sir Winston Churchill's 21st vintage displays a beautiful shiny gold and a cord of very fine bubbles, both characteristic of the long aging lavished on this cuvée.
The nose is beautifully expressive and immediately opens with notes of spices and pepper accompanied by menthol nuances. The complexity is obvious: the aromas of candied fruits and dried fruits complemented by hazelnut are mixed with notes of exotic fruits such as papaya or mango. The nose is particularly open and generous.
The palate is also very generous, where the aromas of candied fruits are supported by notes of pastries, brioche and cocoa. It has a beautiful structure and the large proportion of Pinot Noir gives it the roundness and shoulders that we expect from the vintage. The palate is also marked by a very beautiful length which makes you want to associate it with moments of great gastronomy.
Winemaking & Aging
Once harvested, the grapes are quickly and delicately pressed. A first settling is carried out at the pressing center then a second in our vat room, cold (6°C), for 24 hours. Alcoholic fermentation takes place at low temperature (18°C) in thermo-regulated stainless steel vats where the grape varieties and vintages are vinified separately before final assembly. Malolactic fermentation is carried out on all of the House's wines.
After tasting, blending and bottling, the foaming and aging take place in the cool of our cellars, 33 meters deep. Each bottle is shaken by hand, in the traditional way, before disgorging and dosing.
The wines then rest for at least three months before being shipped.
